Thyme Chicken Stroganoff recipe
This stroganoff is garden fresh. Speckled with hints of thyme and featuring a lighter chicken meat, this dish is great for a spring afternoon.
Ingredients List:
2 tablespoons olive oil, divided
2 tablespoons unsalted butter, divided
½ cup sliced onions
1/2 pound mushrooms, sliced
1 teaspoon dried thyme
1 clove garlic, minced
1 pound chicken tenders, thinly sliced
1/2 cup dry white wine
1 chicken stock
½ teaspoon salt
¼ teaspoon freshly ground black pepper
1 cup sour cream
Directions:
1. Heat 1 tablespoon oil and 1 tablespoon butter in a large skillet over medium heat. Add onions, mushrooms, and thyme; cook until softened, 5 to 7 minutes, stirring. Add garlic and cook 1 minute, until fragrant. Remove from heat and set aside.
2. Add remaining 1 tablespoon oil butter to skillet and increase heat to medium-high. Add chicken in two batches and cook until browned, 5 minutes per batch. Add wine and reduce by half, stirring. Add chicken stock and reserved vegetables. Reduce heat to medium low, cover, and simmer 15 minutes. Season with salt and pepper, stir in sour cream, and serve over rice.
