Shrimp and Red Pepper Stroganoff recipe
An unusual and irresistible stroganoff, this recipe calls for blackened shrimp and roasted red peppers. Slightly sweet, creamy, and refreshing, this dish can be served for a light spring or summer meal.
Ingredients List:
1 pound uncooked shrimp
1 tablespoon blackening seasoning
1 teaspoon sugar
1 tablespoon olive oil
½ cup chopped shallots
1 cup chopped mushrooms
½ cup dry white wine
½ cup chicken or vegetable broth
½ cup jarred roasted red peppers, thinly sliced
½ cup sour cream
2 tablespoons freshly chopped parsley
Directions:
1. Toss shrimp with blackening seasonings and sugar in a medium bowl.
2. Heat olive oil over medium in a large skillet. Add shallot and mushrooms and cook until softened, 5 to 7 minutes. Add shrimp and cook until color turns pink, 3 minutes.
3. Add wine and stock; bring to a boil over high heat. Simmer until thickened, 3 minutes. Add red peppers and sour cream; stir to combine and cook until warmed through, 3 to 4 minutes. Serve with fresh parsley.
