Pesto Steak Stroganoff recipe
A peppy take on the stroganoff, this dish uses prepared pesto to kick up the flavor. Use cilantro for a particularly Brazilian fusion flavor.
Ingredients List:
1 pound sirloin steak, thinly sliced
2 tablespoons olive oil, divided
2 tablespoons unsalted butter, divided
½ cup sliced onions
1/2 pound mushrooms, sliced
1 clove garlic, minced
1/2 cup dry red wine
1 beef stock
½ teaspoon salt
¼ teaspoon freshly ground black pepper
1 cup prepared pesto
Directions:
1. Heat 1 tablespoon oil and 1 tablespoon butter in a large skillet over medium heat. Steak and cook until browned, 4 to 5 minutes. Remove from skillet and set aside.
2. Heat remaining 1 tablespoon oil and butter in skillet; add onions, mushrooms, and garlic; cook until softened, 5 to 7 minutes, stirring.
3. Add wine and cook until reduced by half, 8 to 10 minutes, stirring. Add stock and reserved steak. Reduce heat to medium low, cover, and simmer 15 minutes. Season with salt and pepper, stir in pesto, and serve.
