Light Tomato Stroganoff recipe
This lite version of a typical stroganoff cuts back on the fat with lean sirloin, tomatoes, and light sour cream. Lose the calories without losing the flavor.
Ingredients List:
1 ½ pounds lean sirloin steak, trimmed, cut into thin strips
Cooking spray
1 tablespoon unsalted butter
2 shallots, sliced
2 cloves garlic, sliced
½ pound mushrooms, sliced
1 (12-ounce) can crushed tomatoes
1 cup water
½ teaspoon sea salt
¼ teaspoon freshly ground black pepper
1 cup light sour cream
2 cups cooked brown rice
Directions:
1. Heat a large skillet over high and spray with cooking spray. Add meat and cook 3 to 4 minutes, until browned. Remove from skillet and set aside.
2. Lower heat to low and melt the butter. Add shallots and garlic and cook until softened, 3 minutes. Add mushrooms and cook 2 minutes, until softened.
3. Add tomatoes, water, salt, and pepper; raise heat to high and bring to a boil. Reduce to a low simmer, cover, and cook 30 minutes. Stir in sour cream and serve over brown rice.
