Bison Stroganoff recipe

Bison, also known as buffalo meat, can be found at most specialty food stores, delis, and some supermarkets. The meat is leaner in fat and calories, so this makes for a lighter stroganoff dish with a modified flavor. A must try for meat lovers.

Ingredients List:

1 pound bison prime rib
½ teaspoon salt
½ teaspoon freshly ground black pepper
3 tablespoons unsalted butter
½ cup chopped onions
2 cloves garlic, crushed
1 pound white mushrooms, sliced
¼ cup red wine
¼ cup soy sauce
1 cup beef broth
1 cup sour cream
1 tablespoon minced fresh parsley

Directions:

1. Season the bison with salt and pepper.

2. Heat the butter in a large skillet over medium. Add bison and cook 3 minutes, until slightly browned, stirring. Remove from skillet and set aside.

3. Add onions and garlic to the skillet and cook until softened, 5 to 6 minutes, stirring.
Add mushrooms to skillet and cook 5 minutes, until liquid has been released from mushrooms and cooked out.

4. Add wine and soy sauce to skillet, raise heat to high, and bring to a boil. Simmer until slightly thickened, 3 to 4 minutes.

5. Transfer bison back to skillet; add the broth, mix well, and cook 30 minutes, covered. Adjust salt and pepper as needed, stir in the sour cream, and serve immediately over cooked noodles. Garnish with parsley.
