About Stroganoff
Stroganoff is a popular dish in America that has its roots in Russia. Lore has it that the dish, sautéed pieces of beef served in a sour cream sauce, originated in 19th-century Russia under a royal family of a similar name. While the exact origins are unclear, the first published account of this recipe appeared in Elena Molokhovent’s classic Russian cookbook written in 1861. Called "beef al la stroganav with mustard," the dish called for cubed beef chunks prepared with mustard and bouillon.
Today in America, the dish contains the additions of sautéed mushrooms and onions and is commonly served over noodles or rice. Other places around the world, such as Brazil, Portugal, Lebanon, South Africa, and most of Europe, have their own versions of stroganoff. Beef can be substituted with another meat, tomatoes and other stewed vegetables may be added, and a sauce base of yogurt, wine, or cream may be added.
